Lambrusco di Modena ‘Nessun Dorma’ – 95% grasparossa, 5% salamino planted at 250 meters elevation. Machine harvested, fully destemmed and hand sorted. Fermentation with selected yeasts. Wine spends 4-6 days on lees in tank. Long charmat method. 6 g/l of residual sugar, 7 g of acidity.
